17小時肉鬆海苔包
依次唔係第一次做肉鬆海苔包, 以前跟
孟老師的100道麵包
做過好幾次, 今次我改用17小時的白吐司做包底, 效果好好, 當然啦, 係17小時麻!其實個包唔止17小時, 中種係雪櫃發酵左60小時, 所以, 個包係60小時肉鬆海苔包至真。依個亦係17小時發酵法可愛之處, 中種最長可以放雪櫃發酵72小時, 今日做好個種, 碰岩第二日無時間做包, 可以等多一日再做都無問題。
